I really like the lines in this knife with the symmetry between the plunge line and the bolsters. And the maple is always stunning. I have questions though. Do you heat-treat the ATS yourself? If so, I assume you use an oven with foil wrappers, or do you use inert gas? I've been considering stainless, but the heat treating seems such a PITA that I've stayed away.
Hard to argue with that! I think, however, that a salt pot is not my immediate future. I don't make the volume (or the quality ) of knives to justify that. I think I'll stick with my carbon steel for now.
