Hello everyone, My name is Dakota I am a self taught(with the help of some wonderful people online) knife maker. I specialize is Japanese inspired cutlery. I work out of my backyard, so my set up is small. Been slowly improving my skills and tools over the last year. First attempted making a knife about 2 years ago with just files and scrap steel from shortening some katanas I own. Thank you! I worked in kitchen for years, and it spark my interest in high end cutlery. Eventually started making my own. Theres a lot to know when it comes to japanese kitchen tools, I am constantly learning and know a decent amount, but far from knowing it all or even being a master.
Hi Dakota, Welcome to the forum. You're making some awesome knives there. I am a big fan of honesuki wa and k-tip gyuto wa, but I am not a purist in that I use stainless. What does the pineapple represent? Looks great! Dan
Thanks! I am not a purist either in that I use north american steels. They do use vg10 and a couple other stainless steels but not very often in WA handles. I'm working on my first couple AEB-L right now. Won't be doing the hardening though as I am not equipped to do it right. The Pineapple doesn't have any real provenance other then I needed a logo idea and it came to mind. I guess it suits my style more then anything. Thanks for checking out my work. I have seen your blog before and IIRC it was where I learned more about 2x72s. Still need to figure out what I am doing in that regard. I would rather have one built for me, but I know I can make one for a lot cheaper. Just need to figure it out lol
