I just sat through a demo at work, and I thought I'd pass on an interesting tool I didn't know existed before. Walter abrasives makes a machine called Surfox. It's use in my industry is cleaning stainless welds, but it also does etching. Might be worth a look for any of you superstars that make stainless knives full time. I'm still in the noob class, so it's definitely not an option for me yet, but could be a time saver for some. Polishes, removes any rust contamination, etc. The mini is the one I'd go for, the turbo doesn't etch.
