So last week I get a call from a instructor at a red seal chef school asking me to create a chef knife, he basically gave me carte blanche on the design and style, with one condition ....it has to be functional. so did a bit of thinking and some researching and came up with a design based on a nessmuk ... with a curved blade that would help with the rocking motion in order to mince. the blade is 01 with a flat grind, the spine has rope file work. now the handle is pure inside palm inspiration curved and short gives that really strong grip, and comfortable to use all day. over all size is 8 inches long ( client recommendation ) the scales are maple burl with mosaic brass pin. ( the void in the handle is filled up with epoxy, this picture was taken to show progress to client, still had tape glue on the blade and finishing touch to be done on bolster) will update this week hope you guys like it.
